Recipe
Step 1
Add dates, hot milk and baking soda into a blender and blitz until it becomes a smooth paste. Set aside.
Step 2
Preheat the oven to 350 degrees. Grease an 8 inch square pan and line with parchment. Set aside.
Step 3
In a medium bowl add the all-purpose flour, baking powder and salt and give it to a whisk.
Step 4
In another bowl, add the softened butter, dark brown sugar and beat until light and fluffy.
Step 5
Add the egg, egg yolk, maple syrup, molasses, skyr, vanilla and mashed banana. Beat everything till it’s combined.
Step 6
Fold in the date mixture from Step 1 and add the dry ingredients in and fold them until just combined.
Step 7
Pour the cake batter into the prepared pan and bake for about 20 -25 minutes. A toothpick should come out clean or with minimal crumbs.
Step 8
While the cake cools, make the salted caramel toffee sauce.
Make the Salted Caramel Toffee Sauce
Step 1
Add brown sugar, white sugar and maple syrup with the butter into a saucepan over medium heat and cook until the sugar dissolves and starts to bubble.
Step 2
Gently pour the heavy cream into the mixture and let it boil gently for about 2-3 minutes until thickened.
Step 3
Pull off the heat and add mix in vanilla extract flaky sea salt and skyr until smooth and incorporated.
Assembly
Step 1
Turn out the cake onto your desired dish.
Step 2
Poke holes in the cake using a toothpick or fork and pour half of the salted caramel toffee sauce in the center of the cake. If needed, use a rubber spatula to spread it out over the cake.
Step 3
Slice the cake and top with more salted caramel toffee sauce, serve with Icelandic Provision’s extra creamy Salted Caramel Banana skyr and sprinkle flaky sea salt and enjoy!
