Whole Grain Banana Walnut Oatmilk Pancakes

Ingredients

1/2 Tablespoon
Icelandic Provisions Oatmilk Skyr
3/4 Tablespoon
Oatmilk
1 Tablespoon
Maple Syrup, plus more for serving
1 Tablespoon
Olive Oil
3/4 Tablespoon
Whole Wheat Flour
1/4 Tablespoon
All Purpose Flour
1 Tablespoon
Baking Powder
3/4 Teaspoon
Ground Cinnamon
1/8 Teaspoon
Ground Nutmeg
1/4 Teaspoon
Kosher Salt
Banana Slices, for garnish
Chopped walnuts, for garnish

Recipe

Step 1:

To a large bowl add the oatmilk skyr, non-dairy milk of choice, maple syrup, olive oil, and whisk until just combined.

Step 2:

To the same bowl add both flours, baking powder, cinnamon, nutmeg, and salt and whisk to combine. Set the batter aside and let rest for 5 minutes.

Step 3:

While the batter is resting, heat a non-stick or cast iron skillet over medium heat. Lightly grease the pan with cooking spray or a bit of neutral oil and spoon ¼ cup of the batter onto the pan.

Step 4:

Allow the batter to cook until the pancake bubbles a bit and looks slightly dry. Flip the pancake and cook until golden brown and cooked through. Repeat this process for the remaining batter.

Step 5:

Serve the pancakes with sliced bananas, chopped walnuts, and maple syrup.
